Channeling not the country singer but disease resistance, REBA in this case signifies Resistant Early Bush Acorn. One of the sweetest acorn squashes currently out there, Cornell University did a fabulous job developing this squash and its dry and notable flesh. Plants exhibit a bush habit and are ideal for small gardens with their heavyset yields. Once cured, fruits store well until into December. It's small size lends itself well to stuffing and is great for smaller families or for individual servings. 90 days to maturity.
In the kitchen
Slice squash into wedges, toss in oil, salt and a little curry powder and roast in the oven. Finnish with a sprinkling of sesame seeds to enhance the nuttiness of the squash. Delicious all on its own.
