Also known as Christmas Lima, and recognized as the beans on the cover of Barbara Kingsolver's Animal, Vegetable, Miracle, this splendid dry bean delights in a warm bowl on a cold fall day (and elevated as a side dish for special feasts!) - maybe even enough to please you if you don't like lima beans! The plants grow tall, up to 10', and so need trellising. Pods grow abundantly, producing 3-4 seeds per pod. Lima beans can be harvested as shelling beans when seeds are plump and green inside, though we think this variety shines as dry bean. When pods turn brown and dry they are ready to harvest. When cooked, they have a slight chestnut flavour, which lends them well to warm bean salad with onion, a splash of oil, salt and parsley. Also great in stews of course! 90-95 days to maturity.
