Fagopyrum esculentum

Buckwheat is widely grown as a soil improving cover crop, a flower for bees and as a grain or seed crop. It grows rapidly during the summer and several crops per year may be had with proper management. The rapid and dense growth chokes out weeds and is used in our fields in rotation with the vegetable fields. Grow it to attract beneficial insects and as pasture for honey bees (and then harvest the mature seeds to grin into flour - buckwheat pancakes cooked in a hot cast iron pan served with butter and molasses, a delicious French-Canadian tradition.) Sow in late May through July. For a seed or grain harvest, sow 3 months before fall frost. Harvest after killing frost. 40 days to maturity for blooms, 80 days to maturity for seed/grain.
