A self-blanching heirloom for spring plantings, Early Snowball grows nice and uniform snowy white, solid heads 6-7" across. Start the seeds inside early for a good harvest before the summer heat kicks in. 55 days to maturity.
In the kitchen
Try roasting the florets with olive oil and salt and pepper. Let cool, and mix with quick pickled red onions, parsley or mint, and pickled nasturtium seeds, or capers. Dress with more olive oil, salt and pepper and serve. A classic Italian-inspired dish.
