Beta vulgaris

A dwarf variety that grows exceptionally tender baby greens or it can be left a little longer to maturity and harvested whole for a crop quite similar to bok choy. Best of all, although the culinary quality is similar to the small brassica, Barese is not susceptible to flea beetle damage or black rot, making it an excellent alternative for whole-plant greens at market or the kitchen table. Harvest heads at 7–9" in height to avoid bolting. 30 days to baby, 45 days to maturity.

In the kitchen

Chop the stems separately and sauté them with mushrooms in garlic and onions and a little white wine to start, and then add the chopped leaves. Once the leaves have wilted, take off the heat and serve with a splash a lemon juice, salt and pepper and topped with parmesan cheese.
