Phaseolus vulgaris
This bush-type plant generously pumps out ample green slender gourmet beans that are delicious and tender. Like most filet beans, they are best picked regularly every 2-3 days when beans are 3-4" in length, before the strings develop. Early, with good cold soil emergence. With many beans per stem, it's very prolific. This variety grew and produced very well at the farm on new and rough ground. 55 days to maturity.
In the kitchen
After a quick steam, saute in a pan with olive oil, garlic and a nut or seed of your choice. Add in a few chili flakes if desired. Sprinkle with salt and pepper and a squeeze of lemon and serve.
