First Salad of the Season!

I do love the first, fresh, delicate salad of the season. Claytonia or Miner's lettuce is a wonderful spring delicacy with its heart shaped leaves and mild tangy flavour. A light dressing of oil and lemon and a dash of salt is all that's needed to bring out the best of this little known salad green. I've grown it for many years now in my unheated hoop house. It germinates in late February or early March and is ready to eat by mid April. It happily self-seeds each year without being a nuisance. Plant outdoors in the spring or in the fall for a harvest next spring.
