Snap peas and feta

Aaahh,  Sugar snaps. If you can manage to get them to the kitchen without eating them straight from the vine, sugar snap peas are a great treat.

Lightly steamed or blanched for a minute or two, then dressed with olive oil and a good squeeze of lemon and a pinch of salt, their crunchy sweetness contrasts beautifully with crumbled feta or Asiago cheese.
